How to make easy coconut balls

  1. Into a large bowl add the tahini, honey, oatmeal, desiccated coconut, coconut flour, vanilla, and a pinch of sea salt.
  2. Using a spoon, stir together until the coconut mixture is fully mixed.
  3. Chill the mixture in the fridge for 30 minutes. This will allow the coconut flour and oats to absorb the liquid and make it easier to work with.
  4. After 30 minutes, use a small cookie scoop or spoon to scoop the mixture out and form into 1-inch balls with your hands. The recipe will make about 15 balls.
  5. You can enjoy these delicious coconut balls at room temperature, chilled, or frozen! For best results, store leftovers in the fridge for up to 1 week.

How to turn these into no bake chocolate coconut balls

After you’ve made the balls, take dark chocolate (or milk chocolate)and melt it with a little coconut oil over a double boiler or slowly in amicrowave-safe bowl.

Dip the coconut balls in the melted chocolate and let the excess chocolate run off. Place on a parchment paper (or wax paper) lined baking sheet. Chill in the fridge until the chocolate coating has hardened.

With a coconut center, this chocolate coconut balls recipe reminds me of a ‘mounds bar’ and is such a tasty treat!

Another fun no-bake dessert option: Add a whole almond on the top, shape it into small bars, and turn it into almond joy candy bars!

How to store

Once you’ve made the coconut balls, add them to an airtight container and store them in the fridge or freezer.

They will keep for up to 1 week in the fridge, or 6 months in the freezer!

To freeze, add a single layer into a freezer bag, label it, and date it.

They can be eaten straight out of the freezer or defrosted before enjoying.

Substitutions

Below you’ll find a list of substitutions that will work well in this delicious coconut truffles recipe.

Tahini– Good alternatives for tahini include peanut butter, almond butter, cashew butter, hazelnut butter, and sunflower seed butter.

Honey– Maple syrup and agave nectar are both perfect alternatives to honey. If you use either of those substitutions it will make these no bake coconut balls vegan!

Quick oats– You can use regular old fashioned oats in place of the quick oats, however, you’ll have to work a little harder to keep a smooth shape to these balls. Instant oatmeal would work!

Unsweetened shredded coconut– Swapping in unsweetened coconut flakes (the larger kind) will not work well in this recipe. Since the snack balls are on the smaller side, large flakes won’t work well. If you only have large flakes, turn the mixture into coconut bars! Sweet coconut is not a good substitute.

Coconut flour– Almond flour and oat flour are both good alternatives for coconut flour.
