Why This Mint Chocolate Cake Is So Special

This Mint Chocolate Cake recipe is seriously special for so many reasons, it just works in every single way! But here are some of the top reasons why you’re going to absolutely love it:

Perfect chocolate cake: The chocolate cake recipe we’ll be using to make this delicious cake is, honestly, one of the best ones out there! It’s my recipe that I love and it uses a sponge cake recipe instead of a butter one. This makes the cake light and fluffy, but it soaks up all the flavors perfectly!

Chocolate mint frosting: The frosting we’ll be making for this recipe tastes exactly right! Not too minty that it takes away from the chocolate flavor, but also not too subtle that you can’t taste it at all. It’s seriously incredible. A lot of people use mint buttercream instead, but mint frosting goes a lot better in Mint Chocolate Cakes!

Chocolate ganache: We’ll be topping off this cake with a beautiful, homemade chocolate ganache that is not only easy to make but is incredibly versatile! It gives you a rich chocolate flavor and perfectly balances out the chocolate mint frosting!

This Chocolate Mint Cake recipe seriously works! Just a fair warning, you’re about to fall in love with it!

  • Sugar: While other recipes will have you using confectioners' sugar, powdered sugar, and whatnot, all you need in this one is some granulated sugar! It’ll add the perfect level of sweetness to our frosting!
  • Greek yogurt: We’ll be using some plain Greek yogurt to add to our mint frosting which will make it thicker and even creamier!
  • Heavy whipping cream: Another ingredient we’ll be using in our mint frosting is some heavy whipping cream. You can also use some Cool Whip as I’ve used here. Regardless of what you choose, you just have to make sure it’s properly thawed before using it in this recipe.

  • Spearmint extract: This is what will add that delicious minty flavor to our mint frosting for the perfect Mint Chocolate Cake! I prefer using spearmint extract or spearmint natural oil instead of peppermint extract. It gives the right level of minty flavor that goes perfectly with the chocolate flavor of the cake and ganache.
  • Green food coloring: To give the frosting the perfect green color, we’ll be using some green food coloring. I recommend using leaf green and teal gel food coloring from Wilton for this recipe.

What makes a cake dense and not fluffy? ›

There's a big chance your butter and sugar will over-cream, meaning the butter will trap more air than it should. As the batter bakes, that extra air will deflate and leave you with an overly dense cake. It's all science! For best results, cream butter and sugar together for about 1-2 minutes.

In order to bake cake evenly, you have to insulate its edges. Preventing the temperature of batter at the edge from increasing quickly allows the cake to rise longer before it sets.
